Grilled Seafood Platter with Lemon Butter Sauce
(Serves 4)
Ingredients:
For the Seafood:
- 2 salmon fillets
- 8 large shrimp, peeled and deveined
- 6 sea scallops
- 2 tbsp olive oil
- 1 tsp salt
- ½ tsp black pepper
- ½ tsp garlic powder
- ½ tsp paprika
- 1 tsp fresh lemon juice
For the Lemon Butter Sauce:
- 4 tbsp butter
- 2 cloves garlic, minced
- 2 tbsp lemon juice
- ½ tsp salt
- 1 tbsp fresh parsley, chopped
For the Side:
- 1 bunch asparagus, trimmed
- 1 tbsp olive oil
- ½ tsp salt
- ¼ tsp black pepper
Instructions:
1. Prepare the Seafood
- Pat the salmon, shrimp, and scallops dry.
- In a bowl, mix olive oil, salt, pepper, garlic powder, paprika, and lemon juice.
- Brush this marinade onto the seafood and let it sit for 10 minutes.
2. Cook the Seafood
- Heat a grill pan or outdoor grill to medium-high heat.
- Cook the salmon skin-side down for 4-5 minutes per side until golden and flaky.
- Sear the scallops for 2 minutes per side until a golden crust forms.
- Grill the shrimp for 2-3 minutes per side until pink and opaque.
3. Roast the Asparagus
- Preheat oven to 400°F (200°C).
- Toss asparagus with olive oil, salt, and pepper.
- Roast for 12-15 minutes until tender.
4. Make the Lemon Butter Sauce
- Melt butter in a small pan over medium heat.
- Add garlic and cook for 1 minute until fragrant.
- Stir in lemon juice, salt, and parsley.
5. Serve
Arrange the grilled seafood on a plate with the roasted asparagus and drizzle with the lemon butter sauce. Enjoy!
