Grilled Seafood Platter with Lemon Butter Sauce

(Serves 4)

Ingredients:

For the Seafood:

  • 2 salmon fillets
  • 8 large shrimp, peeled and deveined
  • 6 sea scallops
  • 2 tbsp olive oil
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp garlic powder
  • ½ tsp paprika
  • 1 tsp fresh lemon juice

For the Lemon Butter Sauce:

  • 4 tbsp butter
  • 2 cloves garlic, minced
  • 2 tbsp lemon juice
  • ½ tsp salt
  • 1 tbsp fresh parsley, chopped

For the Side:

  • 1 bunch asparagus, trimmed
  • 1 tbsp olive oil
  • ½ tsp salt
  • ¼ tsp black pepper

Instructions:

1. Prepare the Seafood

  1. Pat the salmon, shrimp, and scallops dry.
  2. In a bowl, mix olive oil, salt, pepper, garlic powder, paprika, and lemon juice.
  3. Brush this marinade onto the seafood and let it sit for 10 minutes.

2. Cook the Seafood

  1. Heat a grill pan or outdoor grill to medium-high heat.
  2. Cook the salmon skin-side down for 4-5 minutes per side until golden and flaky.
  3. Sear the scallops for 2 minutes per side until a golden crust forms.
  4. Grill the shrimp for 2-3 minutes per side until pink and opaque.

3. Roast the Asparagus

  1. Preheat oven to 400°F (200°C).
  2. Toss asparagus with olive oil, salt, and pepper.
  3. Roast for 12-15 minutes until tender.

4. Make the Lemon Butter Sauce

  1. Melt butter in a small pan over medium heat.
  2. Add garlic and cook for 1 minute until fragrant.
  3. Stir in lemon juice, salt, and parsley.

5. Serve

Arrange the grilled seafood on a plate with the roasted asparagus and drizzle with the lemon butter sauce. Enjoy!
