
Quinoa & Chickpea Power Salad with Lemon Tahini Dressing
A hearty, protein-rich salad with quinoa and chickpeas.
Ingredients:
- 1 cup cooked quinoa
- 2 cups arugula
- 1 cup roasted chickpeas
- ¼ cup pomegranate seeds
- ¼ cup crumbled feta (optional)
- ¼ cup chopped almonds
For the Dressing:
- 2 tbsp tahini
- 2 tbsp lemon juice
- 1 tbsp olive oil
- 1 tsp honey
- Salt & pepper to taste
- Water as needed to thin
Instructions:
- Toss together the quinoa, arugula, chickpeas, pomegranate seeds, and almonds.
- Whisk together the dressing ingredients, adding water if needed for a smooth consistency.
- Drizzle over the salad and mix well.
