Ingredients (Serves 4)

For the Shrimp:

  • 1 tbsp olive oil
  • ½ tsp salt
  • ½ tsp black pepper
  • Skewers (if grilling on an open flame)

For the Marinade:

  • ½ cup coconut milk
  • 2 tbsp lime juice (freshly squeezed)
  • 1 tsp lime zest
  • 2 cloves garlic, minced
  • 1 tsp honey or maple syrup
  • ½ tsp red chili flakes (adjust to taste)
  • 1 tbsp soy sauce or fish sauce
  • 1 tbsp fresh cilantro, chopped

  • Extra lime wedges

Instructions:

1. Prepare the Marinade:

  1. In a bowl, whisk together coconut milk, lime juice, lime zest, garlic, honey, chili flakes, soy sauce, and cilantro.

2. Marinate the Shrimp:

  1. Place the shrimp in a bowl or zip-lock bag and pour the marinade over them.
  2. Mix well and let it marinate in the fridge for 20-30 minutes (not longer to avoid over-marinating).
