
Grilled Shrimp Marinated in Coconut-Lime Sauce with a Hint of Chili

Ingredients (Serves 4)
For the Shrimp:
- 1 lb large shrimp, peeled and deveined
- 1 tbsp olive oil
- ½ tsp salt
- ½ tsp black pepper
- Skewers (if grilling on an open flame)
For the Marinade:
- ½ cup coconut milk
- 2 tbsp lime juice (freshly squeezed)
- 1 tsp lime zest
- 2 cloves garlic, minced
- 1 tsp honey or maple syrup
- ½ tsp red chili flakes (adjust to taste)
- 1 tbsp soy sauce or fish sauce
- 1 tbsp fresh cilantro, chopped
For Garnish & Serving:
- Extra lime wedges
- Chopped cilantro
- Jasmine rice or grilled vegetables
Instructions:
1. Prepare the Marinade:
- In a bowl, whisk together coconut milk, lime juice, lime zest, garlic, honey, chili flakes, soy sauce, and cilantro.
2. Marinate the Shrimp:
- Place the shrimp in a bowl or zip-lock bag and pour the marinade over them.
- Mix well and let it marinate in the fridge for 20-30 minutes (not longer to avoid over-marinating).
3. Grill the Shrimp:
- If using skewers, thread the shrimp onto them for easy grilling.
- Heat a grill or grill pan over medium-high heat and brush with olive oil.
- Grill shrimp for 2-3 minutes per side, or until they turn pink and slightly charred.
4. Serve & Enjoy:
- Arrange shrimp on a plate, drizzle with extra coconut-lime sauce, and sprinkle with fresh cilantro.
- Serve with jasmine rice, grilled vegetables, or a fresh salad.
- Squeeze extra lime juice over the shrimp for added freshness.
