
Fruit Cocktail Cake Recipe
Ingredients
For the Cake:
- 2 cups all-purpose flour
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup vegetable oil
- 1 (15 oz) can fruit cocktail (with syrup)
- 1/2 cup chopped pecans or walnuts (optional)
For the Topping (Optional):
- 1/2 cup shredded coconut
- 1/4 cup brown sugar
For the Glaze (Optional):
- 1/2 cup unsalted butter
- 1/2 cup evaporated milk
- 1/2 cup sugar
- 1 tsp vanilla extract
Instructions
- Preheat & Prepare: Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
- Mix Dry Ingredients: In a bowl, whisk together flour, baking powder, baking soda, and salt.
- Prepare Wet Ingredients: In another bowl, beat sugar, brown sugar, eggs, vanilla, and oil until well combined.
- Combine: Gradually mix in the dry ingredients, followed by the canned fruit cocktail (with syrup). Stir in nuts if using.
- Bake: Pour batter into the prepared dish and sprinkle coconut and brown sugar on top. Bake for 35-40 minutes or until a toothpick inserted in the center comes out clean.
- Prepare Glaze (Optional): In a saucepan, combine butter, evaporated milk, and sugar. Bring to a simmer, stirring until sugar dissolves. Remove from heat and stir in vanilla.
- Finish & Serve: Pour the warm glaze over the hot cake and let it soak in. Allow the cake to cool before serving.
