
Pistachio Cake Recipe
Ingredients
For the Cake:
- 1 1/2 cups all-purpose flour
- 1/2 cup ground pistachios (finely blended)
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup unsalted butter (softened)
- 3/4 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup whole milk
- 1/4 cup Greek yogurt or sour cream
- 1/2 cup chopped pistachios (for texture)
For the Pistachio Frosting:
- 8 oz cream cheese (softened)
- 1/2 cup unsalted butter (softened)
- 1 1/2 cups powdered sugar
- 1/2 cup finely ground pistachios
- 1 tsp vanilla extract
- 2 tbsp heavy cream (to adjust consistency)
Instructions
- Preheat & Prepare: Preheat oven to 350°F (175°C). Grease and flour an 8-inch round cake pan.
- Mix Dry Ingredients: In a bowl, whisk together flour, ground pistachios, baking powder, baking soda, and salt.
- Cream Butter & Sugar: In a separate bowl, beat butter and sugar until fluffy. Add eggs one at a time, mixing well. Stir in vanilla extract.
- Combine: Alternately add the dry ingredients and milk to the butter mixture, stirring until smooth. Mix in Greek yogurt and chopped pistachios.
- Bake: Pour batter into the prepared cake pan and bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean. Let cool completely.
- Prepare Frosting: Beat cream cheese and butter until smooth. Add powdered sugar and ground pistachios, mixing until creamy. Stir in vanilla and heavy cream to adjust consistency.
- Assemble & Serve: Spread frosting over the cooled cake and top with extra chopped pistachios for garnish. Slice and enjoy!
