
Cashew Pete Cake Recipe
Ingredients
For the Cake:
- 1 cup cashew nuts (ground into a fine powder)
- 1 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 3/4 cup unsalted butter (softened)
- 1 cup sugar
- 3 large eggs
- 1 tsp vanilla extract
- 1/2 cup milk
For the Frosting (Optional):
- 1/2 cup cashew butter
- 1/4 cup unsalted butter (softened)
- 1 cup powdered sugar
- 1-2 tbsp milk (to adjust consistency)
Instructions
- Preheat & Prepare: Preheat oven to 350°F (175°C). Grease and flour an 8-inch round cake pan.
- Mix Dry Ingredients: In a bowl, whisk together flour, cashew powder, baking powder, baking soda, and salt.
- Cream Butter & Sugar: In a separate bowl, beat butter and sugar until fluffy. Add eggs one at a time, beating well after each. Stir in vanilla extract.
- Combine: Gradually mix in dry ingredients, alternating with milk, until the batter is smooth.
- Bake: Pour batter into the prepared cake pan. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
- Cool & Frost: Let the cake cool completely before adding cashew butter frosting, if desired.
