Grilled Salmon with Mixed Salad

Ingredients:

  • 2 salmon fillets

  • 2 tablespoons olive oil

  • 1 teaspoon Dijon mustard

  • 1 teaspoon honey

  • Juice of 1 lemon

  • 1 clove garlic, minced

  • Salt and pepper to taste

For the Salad:

  • 2 cups mixed salad greens (arugula, spinach, kale, etc.)

  • 1 cucumber, sliced

  • 1/2 cup cherry tomatoes, halved

  • 1/4 red onion, thinly sliced

  • 2 tablespoons olive oil

  • 1 tablespoon balsamic vinegar

  • Salt and pepper to taste

Instructions:

  1. Preheat the grill to medium heat. Whisk together olive oil, Dijon mustard, honey, lemon juice, minced garlic, salt, and pepper in a bowl. Brush the mixture over the salmon fillets.

  2. Place the salmon fillets on the grill, skin-side down. Cook for 4-6 minutes per side, depending on thickness, until the fish is flaky and cooked through.

  3. In a large salad bowl, combine mixed greens, cucumber, cherry tomatoes, and red onion. Drizzle with olive oil and balsamic vinegar, then toss gently.

  4. Serve the grilled salmon over the mixed salad, or on the side, with an additional drizzle of the marinade if desired.
