Mixed Grill Platter with Herb Marinade

Ingredients:

  • 2 chicken thighs

  • 2 beef kebabs

  • 2 lamb chops

  • 1 zucchini, sliced

  • 1 red bell pepper, cut into chunks

  • 1 red onion, cut into wedges

For the Marinade:

  • 1/4 cup olive oil

  • 3 cloves garlic, minced

  • 2 tablespoons lemon juice

  • 1 tablespoon fresh parsley, chopped

  • 1 teaspoon paprika

  • 1 teaspoon dried oregano

  • Salt and pepper to taste

Instructions:

  1. Combine all marinade ingredients in a bowl. Reserve half for basting.

  2. Marinate the meats and vegetables in the remaining mixture for at least 1 hour.

  3. Preheat a grill to medium-high heat. Cook the meats and vegetables, turning occasionally, and baste with the reserved marinade.

  4. Grill until the meats are cooked to your preferred doneness and vegetables are tender.

  5. Arrange on a platter and serve with a side of tzatziki or hummus.
