Quinoa & Chickpea Power Salad with Lemon Tahini Dressing

A hearty, protein-rich salad with quinoa and chickpeas.

Ingredients:

  • 1 cup cooked quinoa
  • 2 cups arugula
  • 1 cup roasted chickpeas
  • ¼ cup pomegranate seeds
  • ¼ cup crumbled feta (optional)
  • ¼ cup chopped almonds

For the Dressing:

  • 2 tbsp tahini
  • 2 tbsp lemon juice
  • 1 tbsp olive oil
  • 1 tsp honey
  • Salt & pepper to taste
  • Water as needed to thin

Instructions:

  1. Toss together the quinoa, arugula, chickpeas, pomegranate seeds, and almonds.
  2. Whisk together the dressing ingredients, adding water if needed for a smooth consistency.
  3. Drizzle over the salad and mix well.
